Soft Custard

Ingredients

• 2-cups nonfat milk • 1/3-cup dry powder milk• 3-whole eggs• 3/4-cup Splenda Measurable• 1-teaspoon vanilla extract• 1-1/2 tablespoons whiskey, optional• for lemon custard, add the juice of 2 lemons and 2-teaspoons lemon zest
(1) Put all ingredients in a blender and using the stir setting, mix all together. Let the bubbles settle.
(2) Pour into a saucepan and over MEDIUM-LOW heat, cook until starting to thicken - stirring constantly with a rubber spatula, scraping the bottom to keep from curdling. This can take up to 20-mins, be patient, its worth it!
(3) Pour into a 1-quart container and put in fridge to cool - it'll thicken more as it cools but will still be pourable (this is a SOFT custard used to pour over cakes, muffins, fruit, make ice cream with, etc....).
