Corn Salad

Ingredients
5 ears of corn or 1 large bag frozen corn1 green pepper chopped1 tomato seeded and chopped1 red onion finely chopped1 lime - zested and juiced3 tbs of olive oilcilantro salt and pepper to taste
Directions
Boil corn or grill - cut kernels from the cob
Chop green pepper, red onion and tomato (seeded)
Mix in large bowl.

In small bowl zest and juice 1 lime
Finely chop cilantro (use more if needed) and mix with oil

Dress salad.

Salt and pepper to taste
