Little Bran Muffins (vegan)

Ingredients
1 Medium Apple (pureed)½ c. Unsweetened Nut Milk1 c. Wheat Bran½ c. Whole Wheat Flour1 tsp. Baking Soda½ tsp. Cinnamon½ c. Raisins
Directions
Preheat over to 400ºF (380ºF on a convection oven)

Puree apple in food processor (you could also use unsweetened apple sauce).

In food processor bowl with dough attachment, add remaining ingredients except the raisins. Process until well mixed, remember to scrape down the sides of the bowl.

Add raisins and mix by hand.

Spray or line muffin pan. Scoop muffin mix in pan. Each cup should be about half-way full.

Bake for 10-15 minutes until desired doneness is reached.
