Apple Caramel Sauce

Sugar 1 LbApple Cider 36 Oz.Cinnamon Stick 1 ea.Lemon Juice 1 mLWater Approx. 4 Oz.Cornstarch Approx. 45 gEarth Balance 1 Tbsp.
Make a slurry of the cornstarch and water.
Bring the Cider and Cinnnamon stick to a simmer and hold hot.
Caramelize the sugar and lemon juice to a medium-dark amber in a heavy bottomed sauce pan.
Remove the cinnamon stick from the cider.
Slowly add the hot cider to the sugar.
Add the Earth Balance and stir till dissolved.
Add some of the cornstarch slurry and bring to a boil, repeat until the desired thickness is achieved.
Cool and refrigerate up to 1 week.
Makes about 6 cups.
