Mediterranean Lentil Salad

  • Number of Servings: 4
Ingredients
2 cups cooked or canned Lentils, 1/2 cup Onions, 1/2 cup Peppers, 2 tsp Olive oil, 2 Tomatoes, 1/3 cup Feta (optional), Italian seasoning, garlic powder, salt and pepper to taste.
Directions
Combine all ingredients and season to taste with Italian seasoning and, salt pepper and garlic powder.

* I cooked 1cup raw lentils for 20 minutes in 3 cups vegetable stock and it yielded 2 cups cooked. I'm sure canned lentils would work fine too*
