Apple Puff Pancake

Ingredients
2 tsp butter2 baking apples, peeled, cored and thinly slicedegg substitute = 3 eggs1/2 cup 2% milk (or your choice)1/3 cup all-purpose flour1/4 tsp baking powderdash of salt2 tsp brown sugar1 tsp cinnamon1 tsp splenda
Directions
Preheat oven to 425. Melt butter in large skillet. Add apples and saute for about 5-6 mins. Place apples in 8" square baking pan that has been coated with cooking spray.

Whisk together egg substitute, milk, flour, baking powder and salt. Mix until smooth. Pour the egg-milk mixture over the apples.

Combine brown sugar, cinnamon and Splenda. Sprinkle over the eggs.

Bake pancake for about 15-20 mins. until puffed and golden brown.

NOTES: To enhance flavor I usually double the amount of brown sugar, cinnamon and Splenda, and sprinkle approximately half the mixture on the apples before pouring egg mixture over. The remaining half is sprinkled on top of the egg mixture.
