3/4 Cup thin sliced red onion, slices cut into half8 Cups small cubed seedless Watermelon3/4 Cup Feta Cheese14 Black Olives, sliced2 Tablespoons Olive Oil1 Cup chopped fresh Mint leaves, optional
Combine in a small bowl the red onion slices and the lime juice. Let stand for 10 minutes.
In large bowl, combine watermelon cubes, feta cheese, black olives, mint if used. Add the set aside onion slices. Drizzle with olive oil and toss.
