Whole Wheat Banana Pancakes

1 C Whole Wheat Flour1 tablespoon white sugar1 teaspoon baking powder1 teaspoon baking soda1/4 teaspoon salt1 egg, beaten1 cup buttermilk1 teaspoon vanilla2 tablespoons apple sauce1 ripe banana, mashed
1. In a bowl, mix together egg, milk, vanilla, apple sauce and banana. Sift flour, sugar, baking powder, baking soda and salt.
2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
3. Lightly grease a griddle or frying pan with cooking spray and place over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot. Makes 8-10 pancakes.
