Simple Eggplant Tofu

Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb Peppers, sweet, red, fresh, 1 small Garlic, 1 clove Tofu, soft, 1 block
Chop everything into 1/2 inch cubes or there about. Except the garlic mince that. (Firm tofu is better for the dish)
Pick you cooking method.
Microwave safe dish, and cook until eggplant is tender.
or
Frying pan, coat with non-stick spray and fry until eggplant is tender stirring constantly.
Serve with rice and I like to add a little (1 tbsp) Kung Poa Sauce (I get mine from Panda) adds 15 cals to meal.
