Mexican Casserole

1 pound Boca crumbles (or ground beef)1/8 C taco or chili seasoning3/4 C water15 oz canned yellow corn, drained1 can original Rotel1 can milder Rotel15 oz canned black beans, drained & rinsed6 oz tomato paste1.75 C shredded soy cheese4 C cooked brown rice1 medium onion
Dice onion and saute in a large skillet w/ Boca crumbles (or ground beef). Add water & taco/chili seasoning Simmer until sauce thickens. Add canned veggies, tomato paste, and beans. Spray a casserole dish and fill with veggie/bean/soy mixture. Top w/ 1/2 C of shredded cheese. Cover w/ cooked brown rice. Sprinkle remaining cheese over top. Baked covered @ 359* until heated through, 20 min. Remove cover and continue baking until cheese is melty, 5 min.
Cut into 6 equal portions and serve. Would be great with sour cream, guacamole, etc. in a tortilla.
