Baked Potato Salad

Ingredients
* Red Potato, 1361 grams (remove) * *Extra Light Olive Oil, 1 tbsp (remove) * Pepper, black, .25 tsp (remove) * Louis Rich Turkey Bacon (1 slice), 8 serving (remove) * Mayonnaise Dressing -- Hellmann's Low Fat, 16 tbsp (remove) * Sour Cream -- Wegmans Fat Free, 4 serving (remove) * Scallions, raw, 4 small (3" long) (remove) * Shallots, 1 tbsp chopped (remove) * Fat Free Cheddar Cheese -- Kraft or equivalent, 1 cup (remove)
Directions
toss potatos, oil, salt and pepper in a bowl. place in single layer on baking sheet. roast 20-25 minutes or until potatoes are tender and lightly browned. set aside to cool. chill for an hour.

cook bacon to desired crispness; chop into small pieces. set aside.

blend mayo, sour cream, green onion, shallot, bacon and cheese in large bowl. season to taste with salt and pepper.

toss potatoes with mayo mix and combine.
