Tuna omelet with feta

Ingredients
4 eggs, medium size2 tbsp milk1 tin (140 grams) tuna in brine, drained1 medium red bell pepper, sliced or chopped1 cup leeks, sliced thinly0.5 cup tomatoes, slicedsalt and pepper to tastethyme
Directions
Whisk eggs and milk, add tuna, leeks and bell pepper. Place tomato slices on top and sprinkle with thyme. Fry in nonstick pan until solidified (or bake in oven for fat-free cooking method - cooking time will be longer). Season to taste. Transfer to plate.

Serving suggestion: Sprinkle feta cubes on top for some more protein, but be aware that this also adds fat.
