Introduction

Ingredients

    2/3 cup fresh lime juice (about five limes)
    1/2 cup honey
    1/2 teaspoon grated peeled fresh ginger
    2 (6 oz.) skinned salmon fillets (approx. 1" thick)
    Cooking spray
    1/4 teaspoon salt
    8 cups romaine lettuce salad
    1 cup sliced peeled mango

Directions

1. Preheat broiler.

2. Combine first 3 ingredients in a small bowl, reserving 3/4 cup juice mixture for dressing. Place salmon fillets on a broiled pan coated with cooking spray. Baste fillets with remaining juice mixture. Broil four minutes on each side or until desired degree of doneness, basting once after turning. Sprinkle fillets with salt.

3. Divide salad greens evenly among 4 plates; arrange salmon and mango on top of greens. Drizzle with reserved dressing.

Makes 4 servings.

    This was an absolutely perfect meal! Yum, yum, yummy and so healthy. ...It did ruin my broiler pan though so watch the sauce to make sure it stays on the fish as much as possible. The sauce that spilled on the pan turned into tar. - 12/18/08

    If you don't have a ripe mango try seedless orange sections. I keep a couple of cans of Mandarin Oranges on hand, just rinse and use. - 3/24/10

    This is delicious. A great way to serve salmon. If you cover your broiler pan with foil you will eliminate the "tar" problem. - 11/12/09
