South of the Border Pasta (hot or cold)

Ingredients
1/2 box of elbow macaroni (whatever kind you prefer)1 15 oz. can of black beans (rinsed well)1 15 oz. can of corn (no salt added) drained1 14.5 oz can of petite diced tomatoes with jalepenos
Directions
Cook half a box of pasta. Cool. Drain, rinse and add black bean and corn. Add tomatoes and half to all of the liquid in can.
*makes approximately 6, 1cup servings.
*makes a great hot pasta dish too. Just toss everything in a skillet, or microwave for a few minutes.
**optional: add a pinch of mexican blend cheese to each serving.
