1 c. dry brown basmati rice1 15 oz. can trader joes diced tomatoes1/2-2/3 c water1/2 tbsp olive oil
put oil in a pan on low to medium heat, pour in dry rice, and cook for 1-2 minutes. Add in tomatoes and water. Bring to a boil, reduce to simmer, and cover. Cook for 40 minutes. Remove from heat and allow to rest 5 minutes before fluffing rice and serving. Makes six servings, approx 1/2 c. each.
