Wilted Cucumbers

2/3 cup vinegar (cider or wine)1/3 cup water4 tbsp. sugar or honey1 tsp. salt1/2 cup thinly sliced onion4 medium cucumbers, peeled and thinly slicedfresh black pepper to taste2 tbsp fresh minced dill or 2 tsp. dried
1. Combine vinegar, water, sugar, and salt in a small saucepan. Heat to boiling, then remove from heat.
2. Place onion and cucumber in a medium bowl, add the hot liquid. Cool to room temperature; add pepper and dill.
3. Let sit overnight. Will keep for at least two weeks in the refrigerator, if it lasts that long.
