Vegan Mushroom Stroganoff

1 Box (8 oz.) SeitanOne Small Onion, Chopped10 oz. Mushrooms, Sliced2/3 Carton (18 tbsp.) Tofutti Better Than Sour Cream3 Cloves Garlic1 Box (16 oz.) Whole Wheat Rotini1 tbsp. Olive Oil
Cook pasta according to directions.
Saute garlic in olive oil until aromatic. Add onion and seitan and saute until golden. Add mushrooms and & cook over medium heat. Stir in sour cream, continue cooking over medium heat. Remove from heat and allow sauce to thicken. If necessary, add cornstarch.
Serve over hot noodles.
1 cup noodles + 1/8 sauce = 1 serving. Makes 8 servings.
