Cheesy Spinach/Turkey Lasagna Rolls

Ingredients
Lasagna Noodles, Whole Wheat, 8 oz (or 1 pkg)*Turkey, Ground turkey, 93% lean, 1lbCottage Cheese, 1% Milkfat, 1 cupSpinach, frozen, 0.5 package (10 oz) yieldsParmesan Cheese, grated, 3/4 cupMozzarella Cheese, part skim milk, 3/4 cupGarlic, granulated, 2 tsp Basil, 1tspSalt, 1 tspPepper, black, 2 tspOregano, ground, 2 tspParsley, dried, 1 tbsp
Directions
Completely brown turkey meat and set aside.

Shred cheeses, mix and set aside about 1/2 cup to top the dish.

Boil lasagna noodles until desired tenderness is reached, drain water and set aside until cool enough to handle.

In a food processor or blender combine cottage cheese, drained spinach and all seasonings until well mixed.

Pour cheese/spinach mixture into a large bowl. Add the ground turkey. Add the remainder of cheese and mix thoroughly.

Prepare a large baking dish with butter spray.

Take cooked lasagna noodles and cut each noodle in half width wise. Spoon 2tbsp of cheese, spinach, turkey mixture onto a noodle, roll and place in the baking dish. Continue until all noodles are used.

Drizzle alfredo sauce over all noodle rolls, spreading evenly over the top.

Sprinkle with 1/2 cup of cheeses.

Bake in the oven @ 350 degrees for 30 minutes.

    I made with Nuefchatel instead of Cottage Cheese. It was good but next time I will add only 1/2 pound of turkey and maybe some more spices. The filler itself was a little bland. - 2/26/10
