Spicy Cabbage Stir Fry with Tofu

2 Cups Brown Rice (fast cooking)4 Cups chopped (shredded) Cabbage1/2 block extra firm tofu (chopped)2 tsp. chopped or minced garlic1/2 cup chopped onionsHot Chili Peppers or Cyanne pepper (to taste)2 tbsp. Extra Virgin Olive Oil
Cook brown rice according to package. (Fast cooking 10 minute brown rice is best)
Shred cabbage and set aside.
Cut chop onions, garlic peppers and tofu.
In a pan heat olive oil and add onions and garlic stir for 2 minutes or until onions start to become opeque.
Add tofu and reduce flame to medium low for 2 - 3 minutes.
Add cabbage and hot peppers and stir until cabbage becomes soft.
plate the cooked rice in the centre of the plate. Spoon stir-fry around rice. Add fresh cooked broccoli and two tomato wedges for a great nutritional garnish.
Serves 4 (1.5 cup per person)
