Mashed "Potatoes" (Cauliflower)

Ingredients
1 head of cauliflower1 clove of garlic, minced1 Tbs. of Light Butter1/4 c. 2% italian blend shredded cheesebeef broth (to taste, use only if too thick until desired consistency)
Directions
steam cauliflower until tender. Put in blender with rest of ingredients until smooth. Add beef broth to taste or until desired consistency.
