Ingredients
Sweet potato, 1 cup Fresh Zuchinni and/or Squash, 6 cup Baked Potato, 15 oz (1 large Baker)red onion, 6 cup (around 3 large ones)Hidden Valley Ranch Original Dry Mix, 1envelopeOlive Oil, 1/4 cup Yellow Bell Pepper cut in strips
Directions
Pierce Skin of Sweet potatoes and Potato place in the microwave for 3 minutes (just enough to soften slightly not cooked all the way). Carefully peel (outside should be soft inside still crunchy.) Cut into 1 inch chunks. Slice the Zucchini and summer squash into 1/4 inch thick rounds. Slice the onions into 6 wedges. Throw everything into a bowl and drizzle with olive oil. Stir to coat, and shake Ranch mix all over. Place in grill basket and cook until veggies are al dent about 30 min.
