Apricot Curried Cod

Ingredients
4 cod filet1/2 tsp Cayanne Pepper2 Tbs Curry Powder3 Tbs Ground Ginger3 Cloves Garlic2 cups Fresh Apricots diced2 Medium onions, finely sliced11/2 tsp cumin seed, ground12 oz Fire roasted Tomatoes1 Tbs Brown Sugar2 Tbs Dry Vermouth

Prep time does not include a marinade time of 2 - 3 hours.

Thaw cod and put into a shallow pan.
Add chile powder, curry powder, ginger and garlic, gently turn repeatedly to cover fish completely. Cover and refrigerate 2-3 hours to allow fish to absorb flavours.
Heat oil in a large heavy saucepan. Add onions to pan and cook, stirring about 5 minutes, until soft. Add cumin, cook 1 minute more. Add tomatoes and cover and cook over low heat 20 minutes.
In a seperate skillet over medium hi heat, rubbed with some oil, sear the seasoned cod filets just enough to brown the outside. Add to tomato/onion cumin mix.
Add (drained) apricots, add salt, sugar and white wine. Simmer, covered at least 10 minutes, until tender. Serve hot.

This works well with chicken as well. the difference is in cooking times
