This is a good high fiber meal that will fill you up and it is a good side dish as well.1 onion, chopped1 green pepper, chopped1 can kidney beans, rinsed1 can pinto beans, rinsed6 oz. V8 juice1 tsp chili powder1 tsp cumin1 cup cornmeal1 cup flour1/4 cup oil2 eggs, beaten1 cup milk1 tsp. baking powder2-4 tsp sugar1/2 tsp salt1/2 cup cheese, shredded
Put the first seven ingredients in a skillet and let the vegetables get soft. Let simmer. While simmering mix the rest of the ingredients in a bowl to make a corn bread mix. Put the simmering mix in a greased 2 quart dish and top with the cormbread mix. Bake in 400 degree oven for 25-35 minutes until cornbread is cooked through.
