Chicken, Corn, and Black Bean Salad with Apricot-Lime Dressing

Ingredients
Salad1 full (2 half) chicken breasts, diced1 package frozen corn, thawed2 cups black beans (1 can if using canned)1 tablespoon cilantro1 red bell pepper, dicedDressing1/3 cup sugar free apricot preserves1 T olive oil1 tsp chili powderjuice of 3 small limessalt and pepper to taste
Directions
Combine salad ingredients in bowl and toss. Mix dressing ingredients together with whisk. Pour over salad and stir to combine. Can be served in lettuce lined bowl if desired.
