Butternut Squash Carrot Soup

Ingredients
5 Cups (chopped) Butternut Squash 2 Cups )chopped) Carrots1 Lrg Onion Diced1 Carton FF Chicken Stock3 Garlic Cloves1 Tsp Curry Powder1 Tsp Nutmeg1 Tsp Pepper1 Tsp Salt2 Tsp Olive Oil
Directions
Saute Onion and garlic. then add everything else to the pot and let simmer for approx 1/2 hour. When done, emulsify. Add more water depending on how thick or runny you like your soup.
