Mediteranean Pasta Salad

Ingredients
1 box Farfalle (bowtie) pasta1 tbsp safflower or other healthy oil1 jar roasted red peppers, diced1 can sliced black olives1 can artichoke hearts, diced1 package grape tomatoes, halved or in thirds1 tbsp red wine vinegar
Directions
Cook pasta al dente. Toss with oil. Add all veggies and toss. Finish with vinegar to taste and toss again.
