Spicy Tomato & Chilli Soup

Ingredients
1 can chopped tomatoes1 fresh chilli, finely chopped1 tbsp sunflower oil1 medium onion, diced1 stock cube (chicken or veg)Seasoning
Directions
Makes 3 - 4 medium sized bowls

1. Heat the sunflower oil (medium heat) in a pan and then add the chopped onion and chilli, cooking until softened
2. Add can of chopped tomatoes and then cook for a few minutes longer, making sure to mix the tomatoes with the onions and chillies
3. Add 1.5 litres of chicken or vegetable stock and leave to simmer for 10 minutes
4. For a smooth consistency, blend the soup
5. Season and serve

I sometimes add a splash of milk or cream at the end but remember this will increase your calories etc.

Also for a thicker version add 2 carrots, chop up into small pieces and fry these in the oil for 5 minutes before adding the onions and chillies in step 1.

    400g is the can size I normally use, I prefer Napolina but any chopped tomatoes will do :)
