Mikey's Cilantro Lime Rice

Ingredients
1 tsp olive oil1 C. rice (uncooked)1 TBSP chopped cilantro1/2-1 tsp salt1 Lime1 3/4 C. water
Directions
Combine olive oil and lime juice. Heat over medium in a medium sauce pan. Add rice. Stir for 1 minute. Add water and 1/2 tsp salt. Bring to a rolling boil. Boil for 1 minute, turn heat OFF and cover. Let stand for 15 minutes. fluff with a fork, then fold in cilantro.
