Low Carb Breakfast Casserole

Ingredients
2c. shredded cheddar cheese1 med. onion, chopped1 pound hot Italian sausage1 dozen jumbo eggs 10 whole, 2 egg whites1 bell pepper1 red pepper1 8oz can sliced mushrooms1 tbsp EVOOSaltPepperCayenne Pepper
Directions
- saute onion, mushrooms and peppers in a bit of EVOO until soft.
- whip eggs with salt and pepper and cayenne
- brown sausage
- coat 9x13 dish with remaining EVOO pour in 1/2 egg mixture cover with sausage, sprinkle with vegetables, cover with cheese, our in remaining egg mixture
- bake at 350 until brown. About 20-25 min.
