Mexican Bruschetta

1 long sour dough baguette (I used Trader Joe's 7 Grain Baguette)1 1/2 pounds tomatoes, seeded and diced pretty small (I highly recommend plum or roma tomatoes)2 tablespoons olive oil1 bunch fresh cilantro, chopped fine6 cloves garlic, minced1/2 - 1 tablespoon red pepper flakes (use less if you don't like spicy food, more if you do)3/4 cup Monterey Jack cheese, shredded
Pre-heat broiler. Slice baguette down the middle lengthwise and brown cut side up ever-so-slightly under the broiler. Mix remaining ingredients in a medium mixing bowl. Distribute evenly over cut side of the sliced bread. Place under broiler until the whole thing begins to brown.
Remove and slice into serving pieces. Serves 6.
