Saltfish Balls

Ingredients
3 medium sized potatoes1 cup of codfish1 tbsp Parsley1/4 cup bell peppers (minced)1/4 onion (minced)1 eggbread crumbsOil (If choosing to fry)
Directions
Pre-soak codfish to remove excess salt. (quick tip: Boil in sugar water. Drain, then soak again.) Remember to break up thick pieces so that it can be soaked properly.

2. Boil potatoes and set aside. Remove skin, then mash lightly. Add onions, peppers, parsley and a bit of pepper to taste.

3. Shred codfish and add to potato mixture. Knead well to ensure even distribution. Add egg and mix well.

Baking (325 if doing a larger batch)
4. divide into small sections and shape into balls. Roll in breadcrumbs and place on baking dish. Place in oven and leave for 15 mins or until brown.

Frying (Can deep fry or shallow. Your preference)

5. Shape balls into whatever size preferred. Roll in bread crumbs and set aside in plate. Allow pan to heat to its maximum, then add oil. Allow the oil to become hot before placing balls in oil. turn lightly allowing each side to take on a brown shade. Remove from oil and place on wax paper or paper towel to drain.
