Grilled Corn & Chipotle Pepper Salad

Ingredients
8 Ears of Corn on the Cob, husks and silk removed1/2 Red Bell Pepper, diced1/2 Red Onion, chopped2 Tbsp Green Onion, sliced 2 Chipotle Peppers, Minced3 Tbsp Fresh Cilantro Leaves, chopped1/4 Cup Extra-Virgin Olive Oil1 Tbsp Garlic, minced1 Lime, juiced1 1/2 Tbsp Kosher Salt1 Tsp Coarsley Ground Pepper
Directions
Preheat Grill to Medium

Arrange the corn on the grill and cook, turning frequently, until the corn is slightly charred, about 12 to 15 minutes

Remove the corn from the grill to a cutting board and let cool. Cut the corn from the cobs with a sharp knife and transfer to a serving bowl. Add all the remaining ingrediants and toss to mix the salad
