Avocado Cucumber Sandwich

Cut avocado in half length-wise. Using side without seed (save other half for later), cut and scoop avocado. Spread it on slice of bread.

Using a potato peeler, skin 1/3 to 1/2 of your cucumber. (Save rest for a salad or throw a few slices in a pitcher of water and keep in the fridge for a refreshing drink!)

Layer the cucumber on the avocado. Sprinkle on a little salt and pepper. Top with second slice of bread. Viola, delicious, refreshing and healthy lunch, especially in summer.

Also, remove crusts and cut into squares and serve as appetizers.
