7 cups diced red potatoes1/2 onion3 tbsp chopped fresh rosemary8 cloves garlic3 tbsp extra virgin olive oilsalt and pepper to taste
preheat oven to 400 degrees
combine all ingredients in large mixing bowl
spread out on cookie sheet
bake at 400 degrees for 20 minutes or until golden brown

I didn't add quite as much garlic as the recipe called for, but after tasting I think 8 cloves would be just right. I really liked the taste of the dish and it is so easy to make. I did reheat leftovers the next day and they seemed to be too dry, so I'd recommend eating them all the first day. - 10/27/10
