Chicken Stir Fry

Ingredients
3 boneless, skinless chicken breasts - cubed1 package ramen noodles (discard season packet)2 cups California or Normandy mix vegetables (broccoli, cauliflower, carrots)1 tbsp olive or canola oil1 tbsp soy sauce
Directions
Prepare ramen according to package directions. Set aside.

Put oil in skillet or wok over medium-high heat. Add chicken and cook until white throughout. Add vegetables and soy sauce to skillet, reduce heat to medium and cover. Cook for approximately 10 minutes or until vegetables are tender firm. Toss with ramen noodles and serve.
