Mamma's Squash Casserole

2 lbs yellow squash, crookneck or straight3 large eggs1 Spanish or Vidalia onion, medium, chopped1 Box chicken-flavored Stovetop Stuffing (or 2 1/2 cup stuffing or bread crumbs)1 can cream of mushroom soup1 tsp salt1/2 tsp pepper1/2 cup margarine or butter, melted1 cup plus 1/4 cup sharp cheddar cheese, grated
Cut squash in cubes. Boil or steam with chopped onion about 10 minutes until al dente (soft but not mushy). Drain. Place in large bowl and mash coarsely. Beat in 1 cup grated cheese, salt and pepper. Stir mixture into mashed squash and onion. Mix half of stuffing mix and whole can of soup into squash mixture.
Place in buttered (or sprayed with cooking spray) 13 x9 x 2 bakeware. Sprinkle remaining 1/4 cup of cheese on top. Bake in oven for 35 minutes and slightly browned on top. Let stand 10 minutes before serving.
Makes 8-10 servings.
