Chicken Marsala

Ingredients
6 4-oz. boneless skineless chicken breast halves1 cup fat-free Italian salad dressing1 tablespoon flour1 teaspoon Italian seasoning1/2 teaspoon garlic powder1/4 teaspoon paprika2 tablespoons olive oil1 tablespoon butter1/2 chicken broth1/2 cup marsala wine8 oz. sliced fresh mushrooms
Directions
Using a meat mallett, flatten each chicken breast to 1/2 inche thickness between two sheets of plastic wrap.

Place flattened breasts in a large container or a resealable plastic bag with the Italian dressing and refridgerate for 15 minutes (or up to overnight).

When ready to cook:

Drain the chicken breasts and discard the remaining marinade.

Combine the flour, Italian seasoning, garlic powder, paprika, and pepper and sprinkle on both sides of each breast.

In a large skillett coated with cooking spray, on medium heat, cook the chicken in oil and butter for a couple of minutes on each side. Does not need to be cooked through.

Transfer to a baking dish coated with cooking spray.

Add broth, wine, and mushrooms to the skillet. Cook until the mushrooms are tender. Pour mixture over chicken breasts and cook for 25-30 minutes until chicken is done.
