Alessi Salad

Ingredients
Use whatever greens you like – mesculin mix, Greenleaf lettuce or spinach11 oz. Can mandarin oranges, drained1 small purple onion, cut-up small¼ cup slivered almonds, toasted (I always add extra)Dressing (I usually double the recipe for larger salads):¼ cup sugar¼ cup white vinegar¼ tsp salt¼ tsp dry mustard¼ tsp minced onionDash paprika1 egg, slightly beaten¼ cup canola oil
Directions
Wash & pat lettuce. Mix lettuce and onion together in salad bowl. Season with fresh ground pepper & coarse salt. Toss. Place in refrigerator until ready to serve. Add the oranges & almonds before serving. Top with homemade dressing.
Dressing:
Combine first seven ingredients in small saucepan. Bring to a boil and boil for one minute. Gradually stir in oil. Chill.
