Thai Ground Chicken Rollups

1 lb. ground chicken3 T. vegetable oil1 sm. red onion, finely chopped3 T. grated ginger2 red Thai or jalapeno chilis, seeded and choppedSmall bunch cilantro, choppedGreen onions sliced lengthwise, for garnishBean sprouts, for garnishWhole Bibb lettuce leaves, separated ORSpring roll wrappersDRESSING:4 T. lime juice4 T. lemon juice3 T. fish sauce3 T. brown sugar1 garlic clove, chopped
Brown chicken in vegetable oil, breaking up thoroughly. Transfer to a bowl. Add onion, ginger, and chilis, and toss well.
Combine all dressing ingredients in small bowl and whisk. Toss the chicken with the dressing and sprinkle cilantro over.
Spoon onto whole Bibb lettuce leaf and top with green onions or sprouts as desired. Roll up and eat.
Or roll up in spring roll wrapper and eat.
