Introduction

Ingredients

    1 large cucumber, thinly sliced
    1/2 medium red onion, quartered and thinly sliced
    1/2 cup seasoned rice vinegar
    1 tbsp. sugar
    1/4 to 1/2 tsp. of fresh chili paste (you can substitute red pepper flakes if needed)
    1/2 tsp. sweet cooking rice wine (optional)
    pinch of salt (or to taste)

Directions

Mix the vinegar, rice wine, sugar, and chili paste together in a small bowl until the sugar is completely dissolved and set aside.
Thinly slice the cucumber and onion and place them in a large bowl. Season the cucumbers and onions with salt.
Pour the vinegar mixture over the cucumber and onion slices. Toss to coat and serve chilled.

    This was excellent! Addictive really. I used mini cucumbers to equal a large one, red pepper flavored rice vinegar & no wine. Also, sweet mayan onion (red was too strong). I used my mandoline slicer to make sure slices were uniform & thin. I had chili paste but used Sriracha instead. Yum! - 1/13/13
