Blueberry Scones with Lemon Glase

Ingredients
2 1/2 cups Healthy Heart Bisquick1/4 cup sugar1/4 cup (half stick) unsalted butter2 large eggs1/4 cup skim milk1 cup frozen blueberriesfor glaze:1 cup confectioners sugarjuice of 1 lemon1/2 teaspoon vanilla
Directions
Whisk together Bisquick and sugar. Mix in butter with your hands until the butter is the size of peas. Beat the eggs well with the milk. Pour wet ingredients into dry ingredients and mix until just blended. Gently fold in blueberries.

Flour surface and your hands. Turn dough onto surface and pat into a 3/4" thick rectangle (it will be very sticky). Cut into 4 squares, then cut each square into 2 triangles. Place scones on ungreased baking sheet and bake until golden brown. Remove scones to wire baking rack and let cook slightly before glazing.

For glaze: Whisk together confectioner's sugar, lemon, and vanilla until smooth. Drizzle over still warm scones.

Makes 8 very large scones.

    Wow these were heavenly! I used low fat buttermilk instead of skim milk which made them nice and moist, the lemon drizzle is delicious and compliements the blueberries wonderfully! I cut my scones in half and baked at 375 for 15 minutes with one turn of the pan. Came out perfect. - 4/29/13

    Made this recipe for my Uncle Mike from AZ while he was here, I cut mine in halves so the portion size was 1/2 the calories... they flew off the rack and my family was trying to get into my second batch I was supposed to be taking home... YUMMMM! :) A++ - 7/22/12

    OMG! Fabulous! I used the Costco bag of berries and 1% milk I would make these again. I baked them at 375 for about 20 minutes then put the glaze on after about 10 minutes. This is a company worthy scone. - 7/22/10
