Sugar-Free, Dairy-Free Chocolate Pudding

1 cup soaked dried fruit (I used a mix of dates, prunes, and raisins)1 1/2 cups almond milk (or other dairy free milk, I think coconut would be good too)1/4 cup cocoa powder2 tbsp arrowroot starch
Puree soaked dried fruit with 1/4 c almond milk
Heat the pureed fruit, 1 cup almond milk, and cocoa powder in a medium saucepan over medium heat until just beginning to boil
Mix 2 tbsp arrowroot in the remaining cold 1/4 cup almond milk
Add the arrowroot-milk mixture to the saucepan and whisk until thickened
Cool in fridge. Makes 3 1/2 cup servings.
