Fresh homemade tomato soup

3 1/2 cups peeled, seeded and chopped fresh tomatos1 carrott grated1/2 onion chopped1 clove of garlic chopped1 stalk of celery chopped1/4 cup of vegetable oil1/4 cup of flour2 cups of chicken broth1 tsp. parsley flakes
Saute, carrot, celery, onion and garlic in 1/4 cup of vegetable oil until vegetables are tender. Add 1/4 cup of flour to oil and vegetables and stir until flour is well distributed and slightly begining to brown. Add chicken broth to vegetables and flour mixture, mix well. Add tomatos and parsley flakes. Mix well and bring to boil and cook for about 30 min., until soup begins to thicken. Remove from heat and blend with emulsion mixer. If creamy soup is desired, milk, cream or sour cream may be added just before serving but calories for those items must be added to total. This makes 6- 2 cup servings.
