Crustless Bacon Spinach Mushroom Quiche

Ingredients
6 Eggs1c Heavy Cream1c Grated Swiss Cheese (or cheese of your choice)4-5 slices cooked bacon2c fresh spinach1c fresh, chopped mushrooms2 tbsp fresh, chopped onion1.5 tbsp cream cheeseGarlic SaltPepper
Directions
*makes 6 servings

Preheat oven to 350F
~Fry bacon to crispy and set aside.
~Drain all grease from pan, except for a small film on the bottom to saute vegetables in.
~Add chopped onion to hot pan, saute for about a minute
~Add chopped mushrooms to onion, saute for about a minute also.
~Add spinach to mushroom/onion mix, saute until thoroughly wilted.
~Remove from heat.
~Salt and pepper the vegetables, and add cream cheese, until it melts, mixing it into the veggies.

~Beat all eggs in a bowl, until texture is even.
~Add cream, and beat with eggs until texture is even.
~Stir in shredded cheese
~Stir in vegetable mix, and crumbled/chopped bacon slices
~Pour into greased quiche pan (I used a round cake pan, and it worked fine)

~Bake for 40 minutes @350F

Serve warm or room temperature.
