Ingredients
* Olive Oil, 2 tbsp * Onions, raw, 1 medium (2-1/2" dia) * Garlic, 4 clove * Green Peppers (bell peppers), 2 cup, strips * Eggplant, 3 cup (1" cubes) * Zucchini, 1 cup, sliced * Summer Squash, 1 cup, sliced * Green Beans (snap), 1 cup * Canned Tomatoes, 1 can *2 tomatoes * Thyme, fresh, 1 tsp * Basil, 4 tbsp
Directions
Heat olive oil in a large, heavy pot. Add onion and sweat until it becomes translucent. Add peppers, saute 3-5 minutes. Add eggplant, saute 3-5 mintues. Add zucchini, squash and garlic. Add tomatoes and thyme, and a little water if it seems dry. Cook 25-30 minutes. Add green beans and cook until they are just done. Garnish with basil.

Makes 6 1-cup servings.
