Carrabba's Copy Cat Sausage Lentil Soup

1.25 lbs Italian Sausage (pork, chicken or turkey)1 medium onion, chopped2 large carrots, peeled and chopped1 stalk celery, chopped1 small zucchini, chopped1 can diced tomatoes or 2 fresh tomatoes, diced6 C chicken broth (low-sodium, no MSG)2 C dried lentils3 garlic cloves, minced or pressed1 t sea salt1/2 t black pepper1/2 t red pepper flakes1 t oregano1 T dried parsley1 sprig fresh thyme (remove before serving)
In dutch oven or large pot, brown sausage with onion, carrots and celery. Drain any fat when sausage is cooked thoroughly. Vegetables will not be thoroughly cooked but will finish cooking with the rest of the ingredients. Add all other ingredients. Bring to a boil. Reduce heat, cover and simmer for one hour or until lentils are thoroughly cooked.
Remove thyme before serving.
Makes 10 servings.
Serving suggestion: Sprinkle with fresh grated parmesan cheese and serve with a whole wheat baguette.
