Stevia Macaroons

Ingredients
About 2-3 full droppers of liquid Stevia (or to taste)1 1/2 cup shredded coconut (you can replace some with ground almonds for great flavour)1 tsp vanilla extract or almond extract3 large egg whites2 tbsp unsweetened cacao (OPTIONAL)2 tbsp flour of choice (I use brown rice)
Directions
Mix dry ingredients together. Beat egg whites, vanilla and stevia. Then add liquid ingred. to dry. Scoop out into balls on non stick baking tray. Makes about 12 x large tablespoon sized mounds.

Bake at 350 for 18-20 minutes.

    made yesterday, very good. little dry but it has no sugar so it was expected. i need to play around with the stevia though, wasn't "sweet" enough for me. tnx for recipe it's a new treat for lunch bag:) - 5/16/13
