Cafe Rio Taco Salad (My version)

Ingredients
1/4 cup cooked "limed" basmati rice- cook with 1T lime juice per cup of rice1/4 cup black beans3 outer leafs chopped red lettuce1/4 cup chopped tomatoes1/4 cup chopped red peppers2 jumbo black olives1/2 oz cheddar cheese2 oz pulled pork tenderloin1 Tbsp ranch dressing mixed with1 Tbsp fresh cilantro and 1 tsp lime juice
Directions
Put limed rice on plate and add everything else on top, ending with the dressing. The pork could be mixed with brown sugar and salsa for the original taste. These are not reflected in the nutritional value.
