Ingredients
170g xylitol sugar170 g margarine2 tablespoons honey225 g gluten free oatsHandful chopped apricotsHandful cranberriesHandful chopped preserved ginger
Directions
Makes 24 squares
Oven temp 180˚C

(You can get the apricots and ginger ready chopped in Sainsbury's, so it's great for idle people; harder work if you want to be organic.)

Melt together the xylitol, margarine and honey, then stir in everything else. You might want to add a few more oats at this stage - I sometimes add another 30 - 60g , depending on the texture.

Spread into a lined and greased Swiss roll tin and bake at 180˚C, gas mark 5, until golden and crisp (15-20 mins). Check a minute or two in advance, just to make sure they are not burning.

Cool a little, then mark into slices.

Remove from tin when quite cold.
