Summer Vegetable Stir-fry

3 tbs canola oil1 onion, chopped1 clove garlic, minced1 carrot, thinly sliced1 green bell pepper, cut in strips1 red bell pepper, cut in strips1 zucchini, quartered and sliced1 yellow crookneck squash, quartered and sliced1 cup sliced okra1 cup whole kernel corn2 tbs lite soy sauce2 tbs cornstarch1 cup water
Wash and prepare vegetables. Heat oil in a large skillet. Add onion and garlic and cook 3 minutes, stirring constantly. Add carrot and peppers. Continue stirring 5 minutes. Add zucchini, yellow squash, okra and corn, stirring 5 minutes more. In measuring cup, mix cornstarch and soy sauce. Then fill the cup with water and stir. Add this mixture to skillet, cover, reduce heat and cook 10 minutes, stirring frequently. Makes 6 cups.
